Wild Rice Almandine (Makes about 6)
Ingredients
- 1 cup uncooked wild rice
- 2 cups chicken broth
- 2 cups white wine
- 1/2 cup butter
- 1 cup blanched slivered almonds
- salt to taste
Method
Cook the wild rice with the chicken broth and white wine according to the directions on your package of wild rice.
You may have to adjust the amounts of broth and wine according to those specified in the directions.
While the rice is cooking, preheat oven to 325 F.
Melt 3 tablespoons of the butter in a large skillet and stir in the slivered almonds.
Spread the almonds on a baking sheet and bake until lightly toasted, about 10 to 15 minutes, stirring frequently.
When rice is cooked, add the rest of the butter to the skillet.
When melted, stir in the cooked wild rice and toasted almonds.
Salt to taste.
